Quick Biscoff Cheesecake

Ingredients:

  • 2 cups Biscoff cookies (crushed)
  • 1/2 cup melted butter
  • 2 cups cream cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 cup heavy cream (whipped)
  • 1/2 cup Biscoff spread (for the filling)
  • 1/4 cup Biscoff spread (for topping)
  • Extra Biscoff cookies (for garnish)

Instructions:

Crust: Mix crushed Biscoff cookies with melted butter and press into the base of a springform pan. Chill in the fridge for 10 minutes.
Filling: Beat the cream cheese and powdered sugar until smooth. Fold in whipped cream and 1/2 cup of Biscoff spread until fully combined.
Assemble: Pour the cheesecake filling over the crust and smooth the top. Chill for at least 4 hours or overnight.
Topping: Melt 1/4 cup of Biscoff spread and drizzle it over the top. Garnish with extra Biscoff cookies.
